The main difference between public and private health insurance in Germany is that public health insurance is based on your income, whereas private insurance is based on your risk profile – things like your age and previous medical history.

If you are eligible for public health insurance (e.g., under the age of 30 and pursuing a regular degree program), after a certain period (usually 12 months), you may have the option to switch to private health insurance. Once you switch to private health insurance, it is typically not possible to switch back to public health insurance during your degree program in Germany.
If you are on private health insurance, switching to public health insurance is generally more challenging. You can only switch back to public health insurance under specific circumstances, such as when you become eligible for public insurance again (e.g., if you change your degree program or your age exceeds the public insurance eligibility limit, usually 30 years old).
To terminate your health insurance coverage after you finish your studies, you simply have to let your insurance company know, and they will tell you what steps to take next. In most cases, after you notify your insurance company, they will terminate your contract, and you can request proof of termination.
